Christmas Saltine Cracker Toffee
Ingredients:
60 saltine crackers about 1 1/2 sleeves
1 cup unsalted butter
1 cup light brown sugar, packed
12 ounces semi-sweet chocolate chips
Sprinkles optional, for decoration
Instructions:
Prepare the Pan: Preheat your oven to 400F 200C. Line a baking sheet with foil, ensuring it covers the entire bottom and sides. This makes cleanup easier and prevents the toffee from sticking.
Arrange the Crackers: Lay the saltine crackers in a single layer on the prepared baking sheet, covering the entire bottom. If needed, break a few crackers into smaller pieces to fill any gaps at the edges.
Make the Toffee: In a medium saucepan over medium-high heat, melt the butter. Once melted, add the brown sugar and stir until it dissolves completely. Bring the mixture to a boil and let it cook without stirring for 3 minutes.
Pour the Toffee Over Crackers: Carefully pour the hot butter-sugar mixture evenly over the crackers. Use a spatula to spread it as needed, ensuring all crackers are covered.
Bake the Toffee: Place the baking sheet in the preheated oven and bake for 5 minutes. The toffee will bubble up as it bakes.
Add the Chocolate Layer: Remove the baking sheet from the oven and immediately sprinkle the chocolate chips evenly over the hot toffee. Let the chocolate sit for 2-3 minutes to soften. If the chocolate isnt melting, place the baking sheet back in the warm oven for an additional minute or two.
Spread the Chocolate: Once the chocolate is soft, use an offset spatula or the back of a spoon to spread it evenly across the toffee layer. Add sprinkles on top if desired, pressing them gently into the chocolate.
Cool and Break: Allow the toffee to cool completely. You can speed up the process by placing it in the refrigerator. Once set, break the toffee into bite-sized pieces.
Storage: Store in an airtight container at room temperature for up to a week.
Tips:
For a twist, use dark chocolate or add a sprinkle of sea salt on top for a sweet and salty treat.
If you prefer a thicker layer of chocolate, add a few more chocolate chips.
