Sweet and Sour Chicken
Ingredients:
For the Chicken:
1 pound chicken breast or thigh, cut into 1-inch pieces
Salt and pepper, to taste
1/2 cup cornstarch
1/2 cup all-purpose flour
1 egg, beaten
Oil, for frying
For the Sweet and Sour Sauce:
1/2 cup ketchup
1/4 cup rice vinegar or white vinegar
1/4 cup sugar
1/4 cup water
1 tablespoon soy sauce
1 tablespoon cornstarch mixed with 1 tablespoon water, for slurry
For the Vegetables:
1/2 green bell pepper, cut into 1-inch pieces
1/2 red bell pepper, cut into 1-inch pieces
1/2 onion, cut into chunks
1/2 cup pineapple chunks
Directions:
Prepare the Chicken Coating: In a bowl, mix cornstarch and flour together. Season the chicken pieces with salt and pepper, then dip each piece in the beaten egg and coat it thoroughly in the cornstarch-flour mixture.
Fry the Chicken: Heat oil in a large skillet or deep pan over medium-high heat. Once hot, carefully add the coated chicken pieces in batches, frying until golden and crispy about 56 minutes. Remove and set aside on paper towels to drain excess oil.
Make the Sweet and Sour Sauce: In a small bowl, whisk together ketchup, vinegar, sugar, water, and soy sauce until well combined. Set aside.
Sauté the Vegetables: In a separate large skillet or wok, add a little oil over medium heat. Sauté the bell peppers, onions, and pineapple chunks for 23 minutes, until slightly tender but still vibrant in color.
Combine Sauce and Vegetables: Pour the sweet and sour sauce into the pan with the vegetables. Bring to a simmer, stirring occasionally. Add the cornstarch slurry cornstarch mixed with water to thicken the sauce, cooking for another minute until the sauce becomes glossy.
Add the Chicken: Add the fried chicken pieces to the sauce and vegetables, tossing to coat everything evenly. Cook for an additional 12 minutes to ensure the chicken absorbs the sauce.
Serve: Plate the sweet and sour chicken hot with steamed rice, garnishing with extra pineapple or bell pepper, if desired.
