Strawberry Delight Crunch Cookies
Ingredients:
For the Cookies:
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup powdered sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup crushed freeze-dried strawberries
For the Crunchy Topping:
1 cup crushed freeze-dried strawberries
1/2 cup granulated sugar
For the White Chocolate Drizzle:
1 cup white chocolate chips
1 tablespoon vegetable oil optional, for smoother drizzle
Directions:
Preheat the Oven: Preheat your oven to 350F 175C and line a baking sheet with parchment paper.
Make the Cookie Dough:
In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy, about 2-3 minutes.
Add the egg and vanilla extract, beating until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Gently fold in the crushed freeze-dried strawberries, distributing them evenly throughout the dough.
Prepare the Crunchy Topping:
In a small bowl, combine the additional crushed freeze-dried strawberries and granulated sugar. This will add an extra layer of strawberry crunch on top of the cookies.
Form the Cookies:
Using a cookie scoop or a tablespoon, scoop out the dough and roll into balls. Place each ball onto the prepared baking sheet, spacing them about 2 inches apart.
Gently press the tops of the cookie dough balls into the strawberry sugar mixture, coating them well with the crunchy topping.
Bake the Cookies:
Bake for 12-15 minutes, or until the edges are lightly golden and the centers are set. Be careful not to overbake for a softer texture.
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Prepare the White Chocolate Drizzle:
In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring between each interval until smooth. If you prefer a thinner drizzle, stir in 1 tablespoon of vegetable oil.
Drizzle the Cookies:
Once the cookies are completely cool, drizzle the melted white chocolate over each cookie using a fork or a piping bag for a pretty, even drizzle.
