Crock Pot Hot Fudge Cake
Ingredients
For the Cake:
2 cups all-purpose flour
1 cup granulated sugar
1/3 cup unsweetened cocoa powder
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1/3 cup melted butter
1 teaspoon vanilla extract
2/3 cup semi-sweet chocolate chips
For the Fudge Layer:
3/4 cup packed brown sugar
1/2 cup unsweetened cocoa powder
1 1/2 cups boiling water
1 teaspoon vanilla extract
Directions
Prepare the Slow Cooker: Lightly grease the inside of a 4-6 quart slow cooker with non-stick cooking spray to prevent sticking.
Mix the Dry Ingredients for the Cake: In a medium bowl, combine the flour, granulated sugar, 1/3 cup cocoa powder, baking powder, and salt. Stir until all dry ingredients are well blended.
Combine Wet Ingredients for the Cake: In a separate large mixing bowl, add the milk, melted butter, and vanilla extract. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid over-mixing for a tender cake texture.
Add Chocolate Chips: Fold in the chocolate chips to distribute them evenly throughout the batter.
Transfer Batter to Slow Cooker: Pour the batter into the prepared slow cooker, spreading it out evenly.
Prepare the Fudge Layer: In a separate bowl, mix together the brown sugar and 1/2 cup cocoa powder. Gradually add the boiling water while stirring until the sugar and cocoa are dissolved. Stir in the vanilla extract.
Pour Fudge Mixture Over the Batter: Carefully pour the fudge layer mixture over the cake batter in the slow cooker. Do not stirthe fudge mixture will settle and form a sauce as it cooks.
Cook the Cake: Cover the slow cooker with the lid and set it to cook on high for 2 to 2 1/2 hours. The cake is ready when the top is set and springs back lightly to the touch, while the bottom remains gooey and sauce-like.
Cool Slightly Before Serving: Turn off the slow cooker and let the cake cool for 15-20 minutes to allow the fudge layer to thicken slightly.
Serve: Scoop the warm cake into bowls, making sure to include a generous amount of the fudge sauce. Serve with a scoop of vanilla ice cream or a dollop of whipped cream for an extra-decadent dessert.
