Easy Mexican Street Corn Elotes
Ingredients:
4 ears of corn, husked
1/4 cup Mexican Crema or substitute with sour cream
1/4 cup mayonnaise
1/2 cup cotija cheese, crumbled feta can be used as a substitute
2 cloves garlic, crushed or finely minced
Zest and juice of 1 lime
1/4 cup fresh cilantro, chopped
1/4 tsp sea salt
Chipotle chili powder, to taste optional for a smoky kick
Instructions:
Grill the Corn:
Preheat your grill to medium-high heat.
Place the husked corn directly on the grill grates, turning occasionally, until the kernels are charred in spots, about 7-10 minutes. Remove from heat.
Prepare the Sauce:
In a bowl, mix the Mexican Crema, mayonnaise, minced garlic, lime zest, lime juice, and sea salt until well combined.
Assemble the Street Corn:
Generously spread the sauce over each ear of grilled corn.
Sprinkle crumbled cotija cheese over the sauce, followed by a dusting of chipotle chili powder if desired.
Garnish with chopped cilantro for an extra burst of color and flavor.
Serve:
Serve the street corn immediately while warm. Enjoy as a side or a festive snack!
