Creamy Mushroom Soup

Ingredients:

1/2 liter butter

1 small onion, minced

1/4 cup olive oil

1 lb sliced mushrooms

2 cloves garlic, minced

1/2 tsp dried thyme or 1 tsp fresh

Salt and pepper to taste

3 cups chicken/vegetable stock

1.5 quart heavy cream

1 tbsp all-purpose flour optional, for thickening


Fresh parsley for garnish

Directions:

In a large saucepan, melt butter and olive oil over medium heat.

Add the mushrooms and cook, stirring for 8-10 minutes, until browned and juices are released.

Add garlic and thyme, cook for 1-2 minutes more.

Pour in the stock and bring to a simmer.

Stir in heavy cream and flour, if using, and cook until thickened.

Season with salt and pepper, then garnish with parsley.
