Chicken Enchiladas
Ingredients:
3 cups shredded cooked chicken
2 cups shredded Mexican cheese blend
1 can 10 oz red enchilada sauce
8 large flour tortillas
1/2 cup sour cream
1/4 cup chopped cilantro optional
1/4 cup diced green onions optional
1 tsp cumin
1 tsp chili powder
Salt and pepper to taste
Instructions:
Preheat oven to 375F 190C.
In a bowl, combine shredded chicken, 1 cup cheese, sour cream, cumin, chili powder, salt, and pepper.
Spread a thin layer of enchilada sauce on the bottom of a greased 9×13-inch baking dish.
Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
Pour remaining enchilada sauce over the tortillas and sprinkle with the rest of the cheese.
Bake for 20-25 minutes until bubbly and golden.
Garnish with cilantro and green onions, if desired, and serve warm.
