Chicken Milanese
Ingredients:
4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup olive oil
1 tsp garlic powder
Salt and black pepper to taste
Lemon wedges and arugula for serving
Instructions:
Place each chicken breast between plastic wrap and pound to an even thickness.
Season the chicken with salt, pepper, and garlic powder.
Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan cheese.
Dredge the chicken in flour, dip in egg, and coat in the breadcrumb mixture.
Heat olive oil in a large skillet over medium heat. Cook the chicken for 3-4 minutes on each side until golden brown and fully cooked.
Serve hot with fresh arugula and lemon wedges.
