Christmas Prime Rib
Ingredients:
5 lbs prime rib roast
6 garlic cloves, minced
3 tablespoons fresh rosemary, finely chopped
2 tablespoons olive oil
2 teaspoons salt
1 teaspoon black pepper
Instructions:
Prepare the Prime Rib: Remove the prime rib from the refrigerator at least 1 hour before cooking to allow it to come to room temperature, ensuring more even cooking.
Preheat the Oven: Preheat your oven to 450F 230C.
Make the Herb Rub: In a small bowl, mix together the minced garlic, chopped rosemary, olive oil, salt, and black pepper to form a paste.
Season the Roast: Pat the prime rib dry with paper towels. Rub the entire surface of the meat with the herb paste, making sure it is evenly coated.
Roast the Prime Rib: Place the prime rib in a roasting pan, bone-side down. Roast in the preheated oven for 20 minutes at 450F 230C, then reduce the temperature to 325F 165C. Continue roasting for about 90 minutes, or until a meat thermometer reads:
120F 49C for rare
130F 54C for medium-rare
140F 60C for medium
Rest the Meat: Remove the prime rib from the oven and cover it loosely with aluminum foil. Let it rest for at least 20 minutes to allow the juices to redistribute, ensuring a juicy roast.
Carve and Serve: Carve the prime rib into slices against the grain. Serve on a platter, garnished with additional rosemary sprigs if desired.
