Cozy Hot Cocoa Cookies
Ingredients:
1 teaspoon salt
2 large eggs
2 teaspoons baking powder
1 cup Mallow Bits mini marshmallows are not recommended for this recipe
3 1/4 cups all-purpose flour
1 teaspoon vanilla extract
1 cup butter, softened
1 cup granulated sugar
2/3 cup brown sugar
1 teaspoon baking soda
4 packages hot cocoa mix or 3/4 cup hot cocoa mix, not sugar-free
1 cup chocolate chips
Instructions:
Cream Butter and Sugars: In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs and vanilla extract, mixing until well combined.
Combine Dry Ingredients: In a separate bowl, whisk together the flour, hot cocoa mix, salt, baking soda, and baking powder.
Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, blending until just combined. Gently fold in the chocolate chips and Mallow Bits.
Chill the Dough: Cover the dough and chill in the refrigerator for at least 30 minutes, or up to 24 hours for even better flavor and texture.
Preheat Oven and Prepare Baking Sheets: When ready to bake, preheat your oven to 350F 175C. Line baking sheets with silicone mats or parchment paper.
Portion the Dough: Drop 2-tablespoon portions of dough onto the prepared baking sheets, spacing each cookie about 2 inches apart.
Bake: Bake in the preheated oven for 9-11 minutes, until the edges are lightly golden. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
