Ingredients

3 oz cream cheese, softened

1/2 cup brown sugar

5 oz pumpkin puree

2/3 cup cold heavy cream

1 tablespoon granulated sugar

1 teaspoon vanilla extract

2 teaspoons pumpkin pie spice

Orange gel food coloring optional

Instructions

Prepare the Cookies:


1. Preheat oven to 350F 175C and line a baking sheet with parchment paper.

2. In a large bowl, cream together butter, oil, granulated sugar, and powdered sugar until light and fluffy.

3. Add the egg and vanilla extract, mixing well.

4. Gradually mix in flour, salt, and baking powder until just combined.

Shape the Cookies:

5. Using a cookie scoop, portion out 9 equal balls onto the baking sheet.

6. Flatten each ball to 1 inch thick and press a deep indentation in the center using a 1/4 measuring cup.

Bake the Cookies:

7. Bake for 8-9 minutes, until set but still soft.

Make the Pumpkin Pie Filling:
