Ingredients:

For the Cookies:

2 cups all-purpose flour

1 tsp baking powder

tsp salt

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 tsp vanilla extract

tsp almond extract optional

For the Royal Icing:

2 cups powdered sugar

2 tbsp meringue powder

34 tbsp water

Gel food coloring red, green, gold, etc.

Directions:

Prepare the Dough:

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy.

Mix in the egg, vanilla extract, and almond extract if using.

Gradually add the dry ingredients to the wet ingredients, mixing just until a soft dough forms.


Chill the Dough:

Divide the dough in half and shape each portion into a disc. Wrap in plastic wrap and refrigerate for at least 1 hour.

Roll and Cut:

Preheat the oven to 350F 175C.

Roll out the chilled dough on a floured surface to about -inch thickness.

Use festive cookie cutters to cut out shapes, then place them on a parchment-lined baking sheet.

Bake the Cookies:

Bake for 810 minutes, or until the edges are just lightly golden.

Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Make the Icing:

In a medium bowl, whisk together the powdered sugar, meringue powder, and water until smooth.

Divide the icing into smaller bowls and mix in gel food coloring as desired.

Decorate:

Use piping bags or spatulas to decorate the cookies with the icing. Add sprinkles or edible decorations for extra holiday flair.

Allow the icing to set completely before serving or storing.
