Ingredients:
For the Cake:
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup granulated sugar
1 cup brown sugar, packed
1 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
3 cups peeled and diced apples Granny Smith or your favorite variety
1 cup chopped pecans
For the Caramel Glaze:
1/2 cup unsalted butter
1/2 cup brown sugar, packed
1/4 cup heavy cream
1/2 teaspoon vanilla extract
Pinch of salt
Directions:
Prepare the Oven and Pan:
Preheat your oven to 350F 175C. Grease and flour a 9×13-inch baking dish or a bundt pan.
Mix the Dry Ingredients:
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
Prepare the Batter:
In a large mixing bowl, beat the granulated sugar, brown sugar, and vegetable oil until smooth and well combined.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Combine the Ingredients:
Gradually mix the dry ingredients into the wet mixture until just combined.
Fold in the diced apples and chopped pecans.
Bake the Cake:
Pour the batter into the prepared pan, smoothing the top with a spatula.
Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool slightly in the pan while you prepare the glaze.
Make the Caramel Glaze:
In a small saucepan over medium heat, melt the butter. Stir in the brown sugar and heavy cream.
Bring the mixture to a gentle boil, then reduce the heat and simmer for 2-3 minutes, stirring constantly.
Remove from heat and stir in the vanilla extract and pinch of salt.
Glaze the Cake:
While the cake is still warm, pour the caramel glaze evenly over the top. Let it soak in slightly before serving.
Tips for Success:
Apple Choice: Granny Smith apples provide a tart balance, but you can use Honeycrisp or Fuji for added sweetness.
Toasting Pecans: Toast the chopped pecans before folding them into the batter for extra flavor.
Storage: Store leftovers in an airtight container at room temperature for up to 2 days or in the refrigerator for up to a week.
