Better Than Anything Bars
Indulge in these decadent Better Than Anything Bars, featuring a rich cookie base layered with gooey caramel, chocolate chips, and a hint of peanut butter.
Ingredients:
For the Cookie Base:
1 cup 225g unsalted butter, softened
1 cup 200g packed brown sugar
cup 100g granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups 280g all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups 340g milk or semi-sweet chocolate chips
For the Caramel Layer:
14 ounces 396g caramels, unwrapped or caramel bits
5 ounces 150ml evaporated milk
cup 85g creamy peanut butter
Directions:
Prepare the Cookie Base:
Preheat the oven to 375F 190C. Grease a 9×13-inch 23×33 cm baking pan or line it with parchment paper.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Fold in the chocolate chips.
Spread half of the cookie dough evenly into the prepared baking pan. Bake for 8-10 minutes, or until the edges are lightly golden.
Prepare the Caramel Layer:
While the cookie base is baking, place the unwrapped caramels and evaporated milk in a microwave-safe bowl.
Microwave on medium power 50% for 1-2 minutes, stirring every 30 seconds, until the caramels are melted and the mixture is smooth.
Stir in the creamy peanut butter until fully incorporated.
Assemble the Bars:
Remove the partially baked cookie base from the oven. Pour the caramel-peanut butter mixture over the top, spreading it evenly.
Drop the remaining cookie dough by teaspoonfuls over the caramel layer, covering as much as possible.
Return the pan to the oven and bake for an additional 17-20 minutes, or until the top is golden brown and set.
Cool and Serve:
Allow the bars to cool completely in the pan on a wire rack.
Once cooled, cut into squares and serve.
