Crumbl-Style Pumpkin Pie Cookies
Ingredients:
For the Cookies:
1 stick 1/2 cup unsalted butter, softened
1/3 cup vegetable or canola oil
1/2 cup granulated sugar
1/4 cup powdered sugar
1 large egg, at room temperature
1 teaspoon vanilla extract
2 & 1/3 cups all-purpose flour
1/4 teaspoon salt
3/4 teaspoon baking powder
For the Pumpkin Pie Filling:
3 oz cream cheese, softened
1/2 cup brown sugar
5 oz pumpkin puree
2/3 cup cold heavy cream
1 tablespoon granulated sugar
1 teaspoon vanilla extract
2 teaspoons pumpkin pie spice
Orange gel food coloring optional
Instructions:
Prepare the Cookies:
Preheat your oven to 350F 175C and line a baking sheet with parchment paper.
In a large mixing bowl or stand mixer, cream together the softened butter, oil, granulated sugar, and powdered sugar until light and fluffy.
Add the egg and vanilla extract, mixing until well incorporated.
Gradually add the flour, salt, and baking powder, mixing until just combined.
Shape the Cookies:
Using a large cookie scooper, scoop out 9 equal-sized cookie balls and place them on the prepared baking sheet.
Gently flatten each ball to about 1 inch thick.
Using a 1/4 measuring cup, press down the center of each cookie to create a deep indentation for the filling.
Bake the Cookies:
Bake for 8-9 minutes, until the cookies are set but still soft.
Remove from the oven and allow the cookies to cool on the baking sheet.
Make the Pumpkin Pie Filling:
In a mixing bowl, beat the cream cheese and brown sugar until smooth.
Add the pumpkin puree, heavy cream, granulated sugar, vanilla extract, and pumpkin pie spice, mixing until well combined.
For a festive touch, add a few drops of orange gel food coloring and stir until evenly distributed.
Assemble the Cookies:
Once the cookies have cooled, spoon the pumpkin pie filling into the center indentation of each cookie.
For best results, refrigerate the cookies for about 30 minutes to let the filling set, or serve immediately for a creamy, pumpkin-filled treat.
