Soft Christmas Peppermints
Ingredients:
2 cups 240g powdered sugar
1 tablespoon 15g unsalted butter, softened
2 tablespoons 30g cream cheese, softened
1/2 teaspoon peppermint extract
Red gel food coloring
Directions:
Prepare the Dough:
In a mixing bowl, combine the powdered sugar, softened butter, softened cream cheese, and peppermint extract.
Mix with a hand mixer or by hand until a smooth, pliable dough forms.
Color and Shape:
Divide the dough into two equal portions.
Add a drop of red gel food coloring to one portion and knead lightly to create a marbled effect.
Roll both portions into small balls, approximately 1 inch in diameter.
Shape the Peppermints:
Press each ball into a peppermint mold or shape by hand into discs for a traditional candy appearance.
Place the shaped peppermints on a baking sheet lined with parchment paper.
Chill:
Refrigerate the peppermints for 1-2 hours until firm.
