Honey Caramel Sunflower Seed Clusters
Ingredients:
1 cup roasted sunflower seeds
1 cup honey
1/2 cup granulated sugar
1/4 cup unsalted butter
1 teaspoon vanilla extract
Pinch of salt
Instructions:
Prepare a Baking Sheet:
Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
Make the Honey Caramel:
In a medium saucepan over medium heat, combine the honey, sugar, butter, and salt.
Stir continuously until the mixture starts to bubble and turns into a smooth caramel. This should take 5-7 minutes.
Add the Sunflower Seeds:
Remove the caramel from heat and stir in the vanilla extract.
Quickly add the roasted sunflower seeds to the caramel and mix until the seeds are evenly coated.
Shape the Clusters:
Using a spoon, drop small mounds of the mixture onto the prepared baking sheet, shaping them into clusters.
Work quickly before the caramel begins to harden.
Let Cool:
Allow the clusters to cool and set completely at room temperature, about 20-30 minutes.
Serve:
Once hardened, transfer the clusters to an airtight container or serve immediately as a sweet, crunchy snack.
