Galaxy Swirl Dragonfruit Éclair Bombs

Transport your taste buds to another universe with these magical éclairs! Filled with a creamy dragonfruit custard and topped with a mesmerizing galaxy glaze, these éclairs are a feast for the eyes and the palate.

Ingredients

For the Choux Pastry:

1 cup water

cup unsalted butter

1 tbsp granulated sugar

1 cup all-purpose flour

4 large eggs

For the Dragonfruit Cream Filling:

2 cups milk

cup granulated sugar

3 tbsp cornstarch

4 large egg yolks

1 tbsp unsalted butter

tsp vanilla extract

cup dragonfruit purée electric blue pitaya for the cosmic hue

1 tsp edible glitter optional

For the Galaxy Glaze:

2 cups powdered sugar

3-4 tbsp milk

Gel food coloring purple, blue, pink, black

Edible silver shimmer dust or stardust

For Decoration:

Edible sugar planets can use round sprinkles or mold fondant

Isomalt comet trails or spun sugar


Directions

Step 1: Make the Choux Pastry

Preheat Oven: Heat your oven to 375F 190C. Line a baking sheet with parchment paper.

Cook the Dough: In a medium saucepan, combine water, butter, and sugar. Heat until butter melts and mixture begins to boil. Reduce heat to low and stir in the flour all at once. Stir vigorously until the dough forms a ball and pulls away from the sides of the pan.

Cool and Add Eggs: Transfer the dough to a mixing bowl and let cool for 5 minutes. Add eggs one at a time, mixing well after each addition, until the dough is smooth and glossy.

Pipe the Éclairs: Transfer the dough to a piping bag fitted with a large round tip. Pipe 3-4 inch logs onto the prepared baking sheet, leaving space between each.

Bake: Bake for 25-30 minutes, or until golden and puffed. Allow to cool completely.

Step 2: Prepare the Dragonfruit Cream Filling

Make the Custard Base: In a medium saucepan, whisk together milk, sugar, and cornstarch. Heat over medium until steaming. In a separate bowl, whisk egg yolks until smooth.

Temper the Eggs: Slowly pour a small amount of the hot milk mixture into the yolks, whisking constantly, then pour the yolk mixture back into the saucepan.

Thicken: Cook over medium heat, whisking, until thickened. Remove from heat and stir in butter, vanilla, dragonfruit purée, and edible glitter if using.

Cool: Cover with plastic wrap directly on the surface and chill in the fridge until firm.

Step 3: Make the Galaxy Glaze

Mix the Base: In a bowl, whisk together powdered sugar and milk until smooth.

Divide and Color: Divide the glaze into small bowls and tint with gel food coloring purple, blue, pink, black.

Create the Galaxy Effect: On a plate, drizzle each color on top of one another. Drag a toothpick through the colors to create a swirl. Dip the top of each éclair into the swirl to coat. Sprinkle with silver shimmer dust.

Step 4: Assemble the Éclairs

Fill the Éclairs: Using a sharp knife, make small holes on the underside of each éclair. Pipe the dragonfruit cream filling into the center.

Glaze and Decorate: Dip the tops into the galaxy glaze. Garnish with edible sugar planets and isomalt comet trails for an otherworldly look.
