Buñuelos
Ingredients:
2 cups all-purpose flour
2 tsp baking powder
1/4 tsp salt
1/4 cup granulated sugar
1/4 cup unsalted butter, melted
2 large eggs
1/2 cup warm milk
1 tsp vanilla extract
Vegetable oil for frying
Cinnamon sugar, for dusting
Instructions:
In a medium bowl, combine flour, baking powder, salt, and sugar.
In another bowl, whisk together eggs, melted butter, warm milk, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, mixing to form a dough.
Divide the dough into small balls and flatten them with your hands into discs.
Heat oil in a deep fryer or skillet over medium heat. Fry the buñuelos until golden brown, about 2-3 minutes on each side.
Remove from the oil and drain on paper towels. Dust with cinnamon sugar while still warm.
