Pizza Sauce with Fresh Tomatoes

Ingredients:

4 large fresh tomatoes, peeled and chopped

2 tbsp olive oil

2 cloves garlic, minced

1 tsp dried oregano

1/2 tsp dried basil

1/2 tsp sugar optional for sweetness

Salt and pepper to taste

1 tbsp fresh basil, chopped optional


Instructions:

Heat olive oil in a saucepan over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add the chopped tomatoes to the pan and cook for 10-12 minutes, stirring occasionally until the tomatoes break down and release their juices.

Add oregano, basil, sugar if using, salt, and pepper. Stir to combine.

Let the sauce simmer for an additional 5-7 minutes to thicken, stirring occasionally.

Taste and adjust seasoning if necessary. If you prefer a smoother sauce, you can use an immersion blender to blend it to your desired consistency.

Remove from heat and stir in fresh basil if desired. Let the sauce cool slightly before spreading on your pizza dough.
