Shamrock Swirl Pie
1 pre-made graham cracker crust
1 1/2 cups heavy whipping cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 package 8 oz cream cheese, softened
1 cup marshmallow fluff
1/2 cup sweetened condensed milk
1/4 cup green food coloring divided
1/4 cup white food coloring
Fresh mint leaves for garnish optional
Directions:
In a large mixing bowl, beat the heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form. Set aside.
In another bowl, beat the softened cream cheese and marshmallow fluff until smooth. Add the sweetened condensed milk and mix until combined.
Divide the cream mixture into two bowls. Add green food coloring to one bowl and white food coloring to the other, stirring to combine.
Gently fold in the whipped cream to both bowls, starting with the green mixture, then the white mixture.
Carefully spoon the green and white cream mixtures into the graham cracker crust, alternating the colors to create a swirl effect.
Using a butter knife or skewer, gently swirl the two colors together to create a marbled effect.
Refrigerate the pie for at least 4 hours, or until firm. Garnish with fresh mint leaves before serving, if desired.
