Pineapple Sunrise Mimosas
Ingredients:
4 1/2 cups pineapple juice
1 1/4 cups freshly squeezed orange juice strained for pulp
1/3 cup lime juice
1/4 cup pineapple slices
1/2 blood orange, sliced
1/2 lime, sliced
1 bottle 750 ml chilled cava or prosecco sparkling wine
1/4 cup Grand Marnier orange-flavored liqueur, optional
Instructions:
1. In a large pitcher or punch bowl, combine the pineapple juice, orange juice, and lime juice. Add the fruit slices.
2. Cover and chill for at least 3 hours or overnight.
3. To serve, pour 1/2 cup of the chilled juice mixture into individual glasses or champagne flutes.
4. Slightly tilt the glass and slowly add in 1/4 cup of the chilled prosecco.
5. Optionally, drizzle in 1 teaspoon of Grand Marnier.
6. Garnish each glass with an orange slice or pineapple slice, if you like.
