Raspberry Fudge Brownie Trifle
Ingredients:
For the Brownies:
1 box fudge brownie mix plus ingredients as instructed on the box
cup water
1/3 cup vegetable oil
2 large eggs
For the Raspberry Filling:
2 cups fresh raspberries
2 tablespoons granulated sugar
1 tablespoon lemon juice
For the Creamy Layer:
1 cups heavy whipping cream
1 cup powdered sugar
1 teaspoon vanilla extract
8 oz cream cheese, softened
For Garnish:
Fresh raspberries
Chocolate shavings or cocoa powder optional
Directions:
Prepare the Brownies: Preheat the oven according to the brownie mix instructions. Grease or line an 8×8-inch baking pan. Prepare the brownie batter as directed using water, oil, and eggs. Pour into the pan and bake as instructed usually 20-25 minutes. Let the brownies cool completely before cutting them into small cubes.
Make the Raspberry Filling: In a medium bowl, combine fresh raspberries, sugar, and lemon juice. Lightly mash with a fork, leaving some chunks for texture. Set aside.
Prepare the Creamy Layer: In a large bowl, beat the heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form. In a separate bowl, beat the softened cream cheese until smooth. Gently fold the whipped cream into the cream cheese mixture until combined.
Assemble the Trifle: In a trifle dish or individual glasses, layer brownie cubes at the bottom. Add a layer of raspberry filling, followed by a generous spoonful of the creamy mixture. Repeat the layers until all ingredients are used, finishing with the creamy layer on top.
Garnish & Chill: Top with fresh raspberries and a sprinkle of chocolate shavings or cocoa powder if desired. Refrigerate for at least 2 hours to allow the layers to set and flavors to meld.
