Chicken Parmesan Pasta
A cheesy, saucy dish combining the best of chicken parmesan and pastacomfort food at its finest!
Ingredients:
8 oz pasta spaghetti, penne, or rigatoni
2 boneless, skinless chicken breasts
蓼 Salt and pepper to taste
1 cup breadcrumbs preferably Italian-style
燎 1 cup grated parmesan cheese
1 1/2 cups marinara sauce
燎 2 cups shredded mozzarella cheese
Fresh basil for garnish
籠 1/2 cup flour for breading
讀 2 large eggs beaten
杻 2 tbsp olive oil
Directions:
1 Preheat oven to 375F 190C. Season chicken breasts with salt and pepper.
2 Coat the chicken in flour, then dip in beaten eggs, and coat with breadcrumbs mixed with parmesan cheese.
3 Heat olive oil in a skillet over medium heat. Cook chicken until golden brown on both sides about 3-4 minutes per side.
4 In a baking dish, spread a little marinara sauce, place chicken on top, and cover with remaining marinara sauce. Top with shredded mozzarella.
5 Bake for 20-25 minutes, until the cheese is melted and bubbly.
6 Meanwhile, cook pasta according to package instructions.
7 Toss pasta with some marinara sauce and serve with the chicken. Garnish with fresh basil.
