Shrimp Pasta Salad
A light, zesty salad full of shrimp, veggies, and a creamy dressingperfect for any occasion!
Ingredients:
3 cups cooked pasta rotini, penne, or farfalle
戀 1 lb cooked shrimp, peeled and deveined
1 cup cherry tomatoes, halved
勒 1/2 cucumber, diced
暈 1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
For the Dressing:
3 tbsp lemon juice
龍 1 clove garlic, minced
籠 1 tsp Dijon mustard
蓼 Salt and pepper to taste
籠 1 tbsp olive oil
拏 1/2 cup mayonnaise
Directions:
1 In a large bowl, combine pasta, shrimp, cherry tomatoes, cucumber, onion, and parsley.
2 In a separate bowl, whisk together lemon juice, garlic, mustard, salt, pepper, olive oil, and mayonnaise until smooth.
3 Pour dressing over the pasta mixture and toss to coat evenly.
4 Chill in the refrigerator for 20-30 minutes before serving.
