Shamrock Shake Dessert Lasagna
This festive, no-bake dessert combines a crunchy chocolate cookie crust, a creamy mint cheesecake layer, and a luscious peppermint pudding filling. Perfect for St. Patricks Day or any time you crave a minty, chocolatey treat!
Ingredients
For the Crust:
24 chocolate sandwich cookies like Oreos, crushed
cup unsalted butter, melted
For the Mint Cheesecake Layer:
8 oz 227g cream cheese, softened
cup granulated sugar
1 teaspoon peppermint extract
Green food coloring optional
1 cups whipped topping like Cool Whip
For the Pudding Layer:
1 package 3.4 oz instant vanilla pudding mix
1 cups cold milk
teaspoon peppermint extract
Green food coloring optional
For the Topping:
1 cups whipped topping
Crushed chocolate sandwich cookies or chocolate shavings for garnish
Mini chocolate chips or sprinkles for garnish
Directions
Make the Crust:
Crush the chocolate sandwich cookies into fine crumbs using a food processor or by placing them in a plastic bag and crushing with a rolling pin.
Mix the cookie crumbs with melted butter until well combined.
Press the mixture evenly into the bottom of a 9×13-inch dish.
Prepare the Mint Cheesecake Layer:
In a bowl, beat the softened cream cheese, sugar, and peppermint extract until smooth.
Add green food coloring if using and mix well.
Gently fold in the whipped topping until fully combined.
Spread this mixture evenly over the cookie crust.
Make the Pudding Layer:
In another bowl, whisk together the vanilla pudding mix, cold milk, peppermint extract, and green food coloring if using.
Mix until thickened about 2 minutes, then spread it evenly over the mint cheesecake layer.
Add the Final Topping:
Spread the remaining whipped topping evenly over the pudding layer.
Garnish:
Sprinkle with crushed chocolate sandwich cookies, chocolate shavings, mini chocolate chips, or festive sprinkles.
Chill & Serve:
Refrigerate for at least 2 hours before slicing and serving.
