Blueberry Cottage Cheese Breakfast Bake
Ingredients:
2 cups cottage cheese preferably full-fat for extra creaminess
4 large eggs 讀
4 tbsp sweetener allulose or erythritol recommended
2 tsp vanilla extract
1 tsp lemon zest
2 tbsp cornstarch or coconut flour
1 cups fresh or frozen berries divided 𢡄
Directions:
Preheat Oven:
Set your oven to 350F 175C and lightly grease an 88-inch 2020 cm square baking dish.
If using muffin tins or ramekins, grease them as well.
Blend the Base:
In a blender or food processor, combine cottage cheese drain excess liquid, eggs, sweetener, vanilla extract, and cornstarch.
Blend until completely smooth and creamy.
Add Berries & Lemon Zest:
Gently stir in 1 cup of berries and the lemon zest if using.
Reserve the remaining cup of berries for topping.
Bake:
Pour the mixture into the prepared baking dish and spread evenly.
Bake for 3540 minutes or until set and lightly golden.
Cool & Serve:
Let it cool for 1015 minutes before slicing.
Top with the reserved berries and sprinkle with a bit of extra sweetener if desired.
Alternative Baking Methods:
Muffin Tins: Fill each full and bake for 2025 minutes.
Ramekins 4 oz.: Bake for 2530 minutes for individual servings.
