Lemon Vodka Slush
Cool, refreshing, and packed with citrus flavor, this lemon vodka slush is the ultimate summer cocktail. Perfect for hot days and backyard parties!
Ingredients:
Simple Syrup:
8 cups water or 4 cups if using sweetener
3 cups granulated sugar or substitute with artificial sweetener
Slush Mixture:
6 cups pineapple juice
5 cups vodka
1 cup fresh lemon juice from 4 large lemons
2 cups fresh grapefruit juice from 2 large grapefruits
4 cups Sprite/7Up or substitute with Sprite Zero/7Up Zero or sparkling water
Extra Sprite/7Up for mixing before serving
Directions:
1. Prepare the Simple Syrup:
In a large saucepan over high heat, stir together water and sugar or sweetener.
Bring to a boil, then reduce heat to medium-low and let it simmer for 10 minutes until fully dissolved.
Transfer the simple syrup to a large 29-cup freezer-safe container and let it cool to room temperature about 30 minutes.
2. Mix and Freeze:
Once cooled, stir in the pineapple juice, vodka, lemon juice, grapefruit juice, and 4 cups of Sprite/7Up.
Cover and place in the freezer for at least 24 hours to set.
3. Serve:
When ready to serve, use an ice cream scoop to scoop the slush into a glass.
Pour in extra Sprite/7Up until the glass is full.
Stir with a spoon or straw to get a perfect slushy texture.
Serve immediately and enjoy!
