Classic Bran Muffins with a Twist 療

Ingredients:
– 1 cup all-purpose flour
– 1 cup bran flakes
– 1/2 cup brown sugar
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 1 cup buttermilk
– 1/3 cup vegetable oil
– 1 large egg
– 1 cup finely chopped apples or finely shredded carrots
Instructions:
1. Preheat your oven to 375F 190C and line a muffin tin with paper liners or lightly grease it.
2. In a large mixing bowl, combine the bran flakes, flour, brown sugar, baking powder, baking soda, and salt. Whisk together until well-blended.
3. In another bowl, whisk together the buttermilk, vegetable oil, and egg until smooth and combined.
4. Pour the wet mixture into the dry ingredients and stir gently just until everything is moistened. Do not overmix; a few lumps are perfectly fine.
5. Gently fold in the finely chopped apples or shredded carrots to add a delightful texture and flavor.
6. Using a spoon or an ice cream scoop, fill the muffin cups about two-thirds full with the batter.
7. Bake in the preheated oven for about 18-20 minutes or until a toothpick inserted into the center comes out clean.
8. Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
