Creamy White Beans with Spicy Sausage, Kale, and Gremolata Breadcrumbs

Ingredients:
– 1 cup breadcrumbs
– 2 cups cooked white beans
– 1 bunch kale, stems removed and leaves chopped
– 2 tablespoons olive oil divided
– 1/2 cup spicy Italian sausage, crumbled
– 2 cloves garlic, minced
– 1 lemon, zested and juiced
– Salt and pepper to taste
– Fresh parsley, chopped for garnish
Instructions:
1. Preheat your oven to 375F 190C. Spread the breadcrumbs on a baking sheet and drizzle with 1 tablespoon of olive oil. Toss to coat evenly and bake for about 8-10 minutes or until golden brown and crispy. Remove from the oven and set aside.
2. In a large skillet over medium heat, heat the remaining tablespoon of olive oil. Add the crumbled spicy sausage and cook for about 5 minutes, breaking it up with a spoon until browned.
3. Stir in the minced garlic and chopped kale, cooking for an additional 3-4 minutes until the kale is wilted and tender.
4. Add the cooked white beans to the skillet, along with the lemon juice and zest. Stir everything gently to combine and let it cook for another 2-3 minutes until heated through. Season with salt and pepper to your liking.
5. To serve, spoon the creamy white bean mixture onto plates and top with the gremolata breadcrumbs and chopped parsley for a fresh finish.
