Ingredients:
– 1 cup unsalted butter, softened
– 2 1/2 cups all-purpose flour
– 2 cups powdered sugar
– 1 large egg
– 1 tsp vanilla extract
– 1 tsp baking powder
– 1/4 tsp salt
– 1 egg white or 2 tbsp meringue powder
– A few teaspoons of water
– Gel food coloring optional
– 1 pack of white fondant
– Food coloring in your desired flower colors
– Flower-shaped cookie cutters or molds
– A small rolling pin
Instructions:
1. Begin by preparing your cookie dough. In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
2. In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy.
3. Add in the egg and vanilla extract, mixing until everything is well incorporated.
4. Gradually combine the dry flour mixture into the butter-sugar mixture, stirring until the dough begins to come together.
5. Divide the dough into two equal discs, wrap them in plastic wrap, and refrigerate for a minimum of 30 minutes. This will help the dough firm up for easier rolling.
6. Preheat your oven to 350F 175C and line a baking sheet with parchment paper.
7. Once chilled, roll out one disc of dough on a lightly floured surface to a thickness of about 1/4 inch.
8. Using a heart-shaped cookie cutter, cut out cookies and place them on the prepared baking sheet.
9. Bake the cookies for 8-10 minutes, or until the edges begin to turn lightly golden. Allow them to cool completely on a wire rack.
10. Prepare the royal icing in a bowl by mixing the powdered sugar, egg white or meringue powder, and vanilla extract.
11. Gradually add water, one teaspoon at a time, until the icing reaches a piping consistencythick but still pipeable.
12. If you want color, divide the icing among different bowls and add gel food coloring to each, mixing until well blended.
13. Once the cookies have cooled, use the royal icing to pipe an outline around the edges of each cookie. Then flood the center with more icing, using a toothpick to spread it evenly. Allow the icing to dry for at least one hour.
14. While waiting for the icing to dry, roll out the white fondant using a small rolling pin to a thickness of about 1/8 inch.
15. Use small flower-shaped cookie cutters or molds to cut out flower shapes from the fondant.
16. Feel free to color the fondant flowers by adding food coloring to achieve your desired flower colors.
17. Once the royal icing is set, gently place a fondant flower on each decorated cookie.
18. To ensure everything sets correctly, let the cookies dry completely for several hours before serving.
