Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

2. Prepare the tart shell: Preheat your oven to 375F 190C. Roll out the chilled dough on a floured surface to fit your tart pan. Carefully press the dough into the pan and trim any excess. Bake the crust for 15-20 minutes, or until it turns a lovely golden brown. Allow it to cool completely.

3. Make the lemon filling: In a heatproof bowl, whisk together the lemon juice, zest, 1/2 cup sugar, and eggs. Set the bowl over simmering water using the double boiler method and keep whisking constantly until the mixture thickens, which should take about 10-12 minutes. Once thickened, take off the heat and whisk in the cubed butter until smooth. Let this cool to room temperature.
