Monster Cookie Dough Cupcakes

Ingredients:
– 1 cup mini M&Ms
– 1 cup smooth peanut butter
– 1 box yellow cake mix plus ingredients as directed on the box
– 1/4 cup butter, room temperature
– 1/4 cup powdered sugar
– 1 tsp vanilla extract
– 2 sticks butter, room temperature for frosting
– 1/2 cup quick oats
– 4 oz cream cheese, room temperature
– 1/4 cup brown sugar
– 1/2 cup powdered sugar for frosting
– 1/4 cup flour
– 1/2 cup mini chocolate chips
– 3 tbsp brown sugar for cookie dough
– Pinch of salt
– 1 cup mini chocolate chips for frosting
– 2 tsp vanilla extract for frosting
– 6-8 cups powdered sugar for frosting
Instructions:
1. Start by making the cookie dough. In a mixing bowl, cream together the cream cheese, butter, and smooth peanut butter until you have a fluffy consistency.
2. Gradually beat in the powdered sugar, brown sugar, flour, vanilla extract, and a pinch of salt until everything is well combined.
3. Add the quick oats, mini chocolate chips, and mini M&Ms, stirring gently to incorporate them into the dough.
4. Roll the cookie dough mixture into small balls and place them on a lined baking sheet. Freeze these cookie dough balls for at least 30 minutes to firm them up.
5. Preheat your oven to 350F 175C. Prepare the yellow cake mix according to the packages instructions, adding in any required ingredients such as eggs and oil.
6. Line a muffin tin with cupcake liners and pour the prepared cake batter into each liner, filling them about halfway.
7. Take the frozen cookie dough balls out of the freezer and press one ball into the center of each filled cupcake batter.
8. Bake in the preheated oven for 14-16 minutes, or until a toothpick inserted into the cupcake comes out clean. Allow the cupcakes to cool completely in the tin before removing them.
9. To prepare the frosting, beat together the room temperature butter, brown sugar, peanut butter, and vanilla extract until creamy and smooth.
10. Gradually add the powdered sugar, mixing until the frosting is thick and fluffy. Fold in the mini chocolate chips for that extra crunch.
11. Once the cupcakes are cooled, pipe the frosting generously on top of each cupcake, covering the cookie dough completely.
12. Finally, garnish each cupcake with a sprinkle of mini M&Ms for a fun finishing touch.
