Ingredients:

– 1 lb dried red beans soaked overnight

– 1 lb turkey sausage, sliced or omit for vegetarian

– 4 cups chicken broth or vegetable broth for vegetarian

– 1 tbsp olive oil

– 2 cups white rice

– 6 cups chicken broth or vegetable broth for vegetarian

– 3 celery stalks, diced

– 1 green bell pepper, diced

– 1 tbsp butter

– 1 tsp dried thyme


– 1 tsp smoked paprika

– 1 bay leaf

– Salt and black pepper, to taste

– 2 green onions, chopped for garnish

– Hot sauce, to taste

Instructions:

1. Rinse and drain the soaked red beans, then set them aside.

2. In a large pot, heat the olive oil over medium heat. Add the sliced turkey sausage and sauté until browned, about 3-4 minutes. Once cooked, remove the sausage from the pot and set aside.

3. In the same pot, add the diced onion, bell pepper, celery, and minced garlic. Sauté for 4-5 minutes until the vegetables are softened and fragrant.

4. Add the soaked red beans to the pot along with the chicken broth, smoked paprika, dried thyme, Cajun seasoning, bay leaf, and a sprinkle of salt and black pepper. Stir everything together well.

5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 1.5-2 hours, stirring occasionally. This will help the beans become tender and creamy.

6. While the beans are simmering, prepare the rice. In a medium saucepan, bring 4 cups of water or broth to a boil. Add the white rice and butter, reduce the heat to low, cover, and let it simmer for 15-20 minutes until fully cooked.

7. Once the beans have cooked, stir in the sautéed sausage. Adjust the seasoning with additional salt, pepper, or Cajun seasoning to taste. Remove the bay leaf before serving.
