Healing Cabbage Soup
Ingredients:
1 medium head of cabbage, chopped
2 large carrots, sliced
2 celery stalks, chopped
1 large onion, chopped
2 cloves garlic, minced
6 cups vegetable broth
1 can 14.5 oz diced tomatoes
1 bay leaf
1/2 tsp dried thyme
1/2 tsp turmeric for its healing properties
Salt and black pepper to taste
Fresh parsley, chopped for garnish
Instructions:
1 In a large pot, sauté onion, garlic, carrots, and celery in a little olive oil until softened.
2 Add vegetable broth, diced tomatoes, bay leaf, thyme, turmeric, salt, and pepper. Stir well.
3 Bring the mixture to a boil, then reduce the heat and simmer for 30-40 minutes, allowing the flavors to meld and the vegetables to become tender.
4 Add the chopped cabbage and simmer for another 10-15 minutes until the cabbage is tender.
5 Remove the bay leaf and serve hot, garnished with fresh parsley.
