Step 1: Begin by preparing the churro layers. Preheat your oven to 375F 190C and line a baking sheet with parchment paper. Roll out the thawed puff pastry sheets. Brush each sheet generously with melted butter. In a small bowl, mix the granulated sugar with the cinnamon, then sprinkle it evenly over both pastry sheets. Bake in the preheated oven for 15-18 minutes until they turn golden and crispy. Once baked, allow them to cool completely.
Step 2: For the cheesecake filling, in a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, vanilla extract, and strawberry puree, mixing until well combined and smooth. In another bowl, whip the heavy cream until stiff peaks form, then gently fold this whipped cream into the strawberry cheesecake mixture, ensuring not to deflate the whipped cream.
