Ingredients:
– 3 large eggs
– 1 tbsp unsalted butter
– avocado, diced plus extra slices for garnish
– cup cherry tomatoes, halved or sliced
– 1 tbsp milk or water
– 2 tbsp crumbled goat cheese
– Salt and black pepper, to taste
– 1 tbsp fresh parsley, chopped optional, for garnish
Instructions:
1. In a medium-sized bowl, whisk together the eggs, milk or water, salt, and black pepper until the mixture is fully combined and frothy. This will help create that fluffy texture.
2. Heat the unsalted butter in a nonstick skillet over medium heat until it melts and coats the bottom of the pan evenly.
3. Pour the egg mixture into the skillet and let it cook undisturbed for about 1-2 minutes, or until the edges begin to set.
4. With a spatula, gently lift the edges of the omelet and tilt the skillet to allow the uncooked eggs to flow towards the edges. This helps cook the eggs evenly.
