Mini Banana Pudding Cheesecakes

Ingredients:
– 1 large egg
– 1/4 cup mashed ripe banana
– 1/2 cup whipped cream
– 8 oz cream cheese, softened
– 1 cup vanilla wafer crumbs
– 2 tablespoons granulated sugar for the crust
– 3 tablespoons unsalted butter, melted
– 1/4 cup granulated sugar for the cheesecake filling
– 1/2 teaspoon vanilla extract
– 4 vanilla wafers optional, for garnish

Instructions:
1. Start by preheating your oven to 325F 163C. Line a muffin tin with 8 paper liners for easy removal.
2. In a small bowl, mix together the vanilla wafer crumbs, granulated sugar 2 tablespoons, and melted butter. The mixture should have a texture similar to wet sand.
3. Take about 1 tablespoon of the crumb mixture and press it firmly into the bottom of each paper liner to form the crust. Set these aside while you prepare the cheesecake filling.
4. In a large mixing bowl, combine the softened cream cheese and the sugar 1/4 cup and beat them together until the mixture is smooth and creamy.
5. Add the large egg, 1/2 teaspoon of vanilla extract, and 1/4 cup of mashed ripe banana to the cream cheese mixture. Beat until everything is fully combined.
6. Carefully spoon the cheesecake filling over the crusts in the muffin liners, filling each about three-quarters full.
7. Place the muffin tin in the preheated oven and bake for 18-20 minutes. Youll know theyre done when the centers are set but still slightly jiggly.
8. Once baked, remove them from the oven and let them cool to room temperature. Then, refrigerate the mini cheesecakes for at least 2 hours until they are adequately chilled.
