Rich Chocolate Strawberry Swirl Cheesecake A Luscious Delight!
A chocolate lovers dream comes true with this creamy cheesecake swirled with fresh strawberries! Perfect for sharing, or keeping all to yourself!
Ingredients:
– cup unsalted butter, melted
– 16 oz 2 packages cream cheese, softened
– cup semi-sweet chocolate chips, melted
– 1 cup granulated sugar
– cup unsweetened cocoa powder
– cup granulated sugar for the strawberry swirl
– 1 cup fresh strawberries, hulled and sliced
– 3 large eggs
– cup chocolate cookie crumbs Oreo or chocolate graham crackers
– 1 tbsp lemon juice
– 1 cups chocolate cookie crumbs Oreo or chocolate graham crackers
– 1 tbsp cornstarch optional, for thickening
– 1 tsp vanilla extract
– 1 cup sour cream
Instructions:
1. Preheat your oven to 325F 160C and grease a 9-inch springform pan to ensure easy removal of the cheesecake.
2. In a mixing bowl, combine 1 cups of chocolate cookie crumbs, cup granulated sugar, and cup melted butter. Mix well until all crumbs are coated. Press this mixture firmly into the bottom of the prepared springform pan. Bake for 10 minutes, then set aside to cool.
3. For the strawberry swirl, combine 1 cup of sliced strawberries, cup granulated sugar, 1 tbsp lemon juice, and 1 tbsp cornstarch if using in a saucepan over medium heat. Cook for about 5-7 minutes, stirring occasionally, until the mixture thickens. Remove from heat and allow it to cool.
4. In a large mixing bowl, beat 16 oz of softened cream cheese and 1 cup of granulated sugar together until the mixture is smooth and creamy. Add 1 tsp of vanilla extract, then incorporate the eggs one at a time, mixing thoroughly after each addition.
5. Gently fold in 1 cup of sour cream, cup of cocoa powder, and the cup of melted chocolate chips until fully combined.
6. Pour the cheesecake batter over the cooled chocolate crust, smoothing the top with a spatula. Take spoonfuls of the cooled strawberry mixture and dollop them on top of the cheesecake. Use a knife to gently swirl the strawberry mixture into the cheesecake batter to create a beautiful marbled effect.
7. Bake the cheesecake in the preheated oven for 50-55 minutes, or until the center is slightly jiggly. Once baked, turn off the oven and let the cheesecake sit inside for an additional 1 hour.
8. After cooling, refrigerate the cheesecake for at least 4 hours or overnight for optimal flavor and texture.
9. Serve chilled, garnished with fresh strawberries and chocolate shavings for an extra indulgent treat!
