Ingredients:
– 1 cup fresh or frozen strawberries, diced
– 8 oz cream cheese, softened
– cup all-purpose flour for crumble topping
– cup granulated sugar for both fillings
– 3 cups all-purpose flour for the dough
– cup unsalted butter, melted
– 2 tbsp milk for glaze
– cup powdered sugar for the cream cheese filling
– cup granulated sugar for the crumble topping
– 1 packet 2 tsp instant yeast
– tsp salt
– 1 egg
– 1 tbsp cornstarch
– 1 tbsp lemon juice
– tsp vanilla extract
– 1 cup powdered sugar for glaze
– cup unsalted butter, softened for crumble topping
– cup warm milk about 110F
Instructions:
1. Make the dough: In a large bowl, mix 3 cups of all-purpose flour, cup granulated sugar, 1 packet of instant yeast, and tsp salt. Add cup of warm milk, cup melted butter, and 1 beaten egg. Combine until a dough forms. Knead the dough for approximately 8-10 minutes until smooth. Cover with a clean towel and let it rise in a warm place for about 1 hour or until doubled in size.
2. Prepare the cream cheese filling: In a mixing bowl, beat together 8 oz softened cream cheese, cup powdered sugar, and tsp vanilla extract until the mixture is creamy and smooth.
3. Prepare the strawberry filling: In a saucepan over medium heat, combine 1 cup diced strawberries, cup granulated sugar, 1 tbsp cornstarch, and 1 tbsp lemon juice. Cook while stirring until the mixture thickens. Once thickened, remove from heat and allow it to cool.
4. Make the crumble topping: In a bowl, mix together cup all-purpose flour, cup granulated sugar, and cup softened unsalted butter until the mixture becomes crumbly. Set aside.
5. Assemble the rolls: Once the dough has risen, roll it out into a large rectangle measuring approximately 12×18 inches. Evenly spread the cream cheese filling across the dough, followed by the strawberry filling. Roll the dough tightly from the long end and slice it into 12 equal pieces. Place the rolls into a greased 9×13-inch baking dish. Cover with a towel and let them rise for another 30 minutes.
6. Add crumble and bake: Preheat your oven to 350F 175C. Evenly sprinkle the crumble topping over the rolls. Bake the rolls for 25-30 minutes or until they turn golden brown.
7. Drizzle with glaze and serve: In a small bowl, mix 1 cup powdered sugar with 2 tbsp milk and tsp vanilla extract to make a glaze. Once the rolls are out of the oven and slightly cooled, drizzle this glaze over the warm rolls. Enjoy these sweet, fluffy strawberry-filled delights!
