Costco Tuxedo Cake Recipe with a Twist

Ingredients:

1 cups 220g all-purpose flour

1 cup 240ml hot coffee or hot water

cup 120ml vegetable oil

2 large eggs

1 cups 300g granulated sugar

1 tsp baking soda

tsp salt

cup 90g unsweetened cocoa powder

cup 120ml buttermilk

tsp baking powder

1 tsp vanilla extract

1 cup 175g dark chocolate chips

1 cups 360ml heavy whipping cream, divided

cup 50g granulated sugar, divided

1 cup 175g white chocolate chips


1 cup 175g dark chocolate chips for ganache

cup 120ml heavy cream for ganache

Optional Garnish: Chocolate shavings, curls, or sprinkles

Instructions:

1. Preheat your oven to 350F 175C. Grease and line two 9-inch round cake pans for easy removal.

2. In a large mixing bowl, combine the all-purpose flour, unsweetened cocoa powder, baking soda, baking powder, and salt. Whisk together until well mixed.

3. In another bowl, beat the eggs, granulated sugar, and vegetable oil together until smooth and creamy. Add in the buttermilk and vanilla extract, mixing well to combine.

4. Gradually fold the dry ingredients into the wet mixture, stirring just until incorporated. Slowly pour in the hot coffee or water to help thin the batter.

5. Evenly distribute the batter between the prepared cake pans. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely in the pans.

6. For the white chocolate mousse, melt 1 cup of white chocolate chips with cup of heavy cream in the microwave, stirring until smooth. Allow to cool. In a separate bowl, whip the remaining 1 cup of heavy cream with cup of granulated sugar until soft peaks form, then gently fold this whipped cream into the cooled white chocolate mixture.

7. For the dark chocolate mousse, melt 1 cup of dark chocolate chips with cup of heavy cream in the microwave, stirring until smooth. Allow to cool. Whip the remaining 1 cup of heavy cream with cup of granulated sugar until soft peaks form, and fold into the cooled dark chocolate mixture.

8. To assemble the cake, place one chocolate cake layer on a serving plate. Spread an even layer of white chocolate mousse over the top. Carefully place the second chocolate cake layer on top and spread dark chocolate mousse evenly over it.

9. Next, prepare the ganache by heating cup of heavy cream in a small saucepan until it simmers. Pour it over 1 cup of dark chocolate chips in a bowl, stirring until smooth and glossy.

10. Pour the ganache over the top of the assembled cake, allowing it to drip down the sides.

11. Refrigerate the cake for at least 2 hours to let the mousse and ganache set properly. If desired, garnish with chocolate shavings, curls, or sprinkles before serving.
