Cheesecake Fruit Salad
Bright, refreshing, and oh-so-creamy! This cheesecake fruit salad is the perfect dessert for any occasion!
Ingredients:
– 1 cup red grapes, halved
– 2 cups strawberries, hulled and halved
– 2 cups green apples, cored and diced
– 1 cup caramel sauce store-bought or homemade
– 1 cup granola or crushed graham crackers
– 8 oz cream cheese, softened
– 1 cup heavy whipping cream
– 1 tsp vanilla extract
– 1 cup powdered sugar
Instructions:
1. Start by preparing the cheesecake filling. In a medium bowl, beat the softened cream cheese with a hand mixer until its smooth and creamy.
2. Add the powdered sugar and vanilla extract to the bowl, mixing until well combined and there are no lumps.
3. In a separate large bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until its smooth and fluffy; be careful not to deflate the whipped cream too much.
4. In another large mixing bowl, combine the strawberries, green apples, and halved grapes. Toss gently to mix the fruits evenly.
5. Now, assemble the fruit salad. Spread a generous layer of the cheesecake filling over the mixed fruit and gently fold it in until all the fruits are evenly coated with the filling.
6. To finish off, top with granola or crushed graham crackers for a delightful crunch, and then drizzle caramel sauce over the entire salad for a sweet touch.
7. For the best flavor, chill the cheesecake fruit salad in the refrigerator for about 1 hour before serving. Enjoy your creamy, crunchy, fruity dessert!
