Pfeffernusse Cookies
Ingredients:
2 1/2 cups all-purpose flour
1 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp ground nutmeg
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
3/4 cup dark brown sugar, packed
1/4 cup molasses
1 large egg
1 tbsp brandy optional, for authentic flavor
1/2 cup powdered sugar for rolling
Instructions:
1 Preheat your oven to 350F 175C and line baking sheets with parchment paper.
2 In a large bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Set aside.
3 In a separate bowl, cream the butter and brown sugar until light and fluffy. Add the molasses, egg, and brandy if using, and mix until well combined.
4 Gradually add the dry ingredients to the butter mixture, stirring until a dough forms.
5 Roll the dough into small 1-inch balls and place them on the prepared baking sheets, spaced about 2 inches apart.
6 Bake for 8-10 minutes, or until the edges are set and lightly golden.
7 Let the cookies cool on the baking sheets for 5 minutes, then roll them in powdered sugar to coat.
8 Allow the cookies to cool completely before serving. Enjoy these spicy, sweet treats!
