Mexican Wedding Cookies
Ingredients:
1 cup unsalted butter, softened
1/2 cup powdered sugar, plus extra for rolling
1 tsp vanilla extract
2 cups all-purpose flour
1 cup finely chopped pecans or walnuts
1/2 tsp salt
Instructions:
1 Preheat your oven to 350F 175C and line a baking sheet with parchment paper.
2 In a large bowl, cream the butter and powdered sugar together until smooth and fluffy.
3 Add the vanilla extract and mix until combined.
4 Gradually add the flour and salt, mixing until the dough comes together. Stir in the chopped nuts.
5 Roll the dough into small 1-inch balls and place them onto the prepared baking sheet, spacing them about 1 inch apart.
6 Bake for 12-15 minutes, or until the cookies are lightly golden on the bottom.
7 Allow the cookies to cool for a few minutes, then roll them in powdered sugar until well-coated.
8 Let the cookies cool completely before enjoying these melt-in-your-mouth treats!
