Pignoli Cookies
Ingredients:
8 oz almond paste
1/2 cup granulated sugar
1/2 cup powdered sugar
2 large egg whites
1 cup pine nuts
Instructions:
1 Preheat your oven to 350F 175C and line a baking sheet with parchment paper.
2 In a food processor, blend the almond paste, granulated sugar, and powdered sugar until crumbly.
3 Add the egg whites one at a time, mixing until a smooth, sticky dough forms.
4 Scoop small portions of dough about 1 tbsp and roll them into balls.
5 Coat each ball generously with pine nuts, pressing gently to stick.
6 Place on the prepared baking sheet, spaced 2 inches apart, and bake for 15-20 minutes until golden.
7 Let cool before serving and enjoy the chewy delight!
