Italian Easter Cookies
Ingredients:
3 cups all-purpose flour
1/2 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
2 large eggs
1 tbsp anise extract optional, for traditional flavor
1/4 cup milk
1/4 cup rainbow sprinkles optional
1 egg, beaten for brushing
Colored sugar or sprinkles for topping
Glaze optional:
1 cup powdered sugar
2-3 tbsp milk
1/2 tsp vanilla extract
Instructions:
1 Preheat your oven to 350F 175C and line baking sheets with parchment paper.
2 In a large bowl, whisk together the flour, sugar, baking powder, and salt.
3 Cut the butter into the dry ingredients until it resembles coarse crumbs. Add eggs, anise extract if using, and milk. Mix to form a dough.
4 Divide the dough into small portions and roll into strips, forming into loops or other shapes, such as braids or rings.
5 Place cookies on the baking sheets. Brush with beaten egg and sprinkle with rainbow sprinkles.
6 Bake for 8-10 minutes, or until lightly golden.
7 Optional: To make the glaze, mix powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cookies.
