Vasilopita – Greek New Years Cake

Ingredients:

2 cups all-purpose flour

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup unsalted butter, softened

1 1/2 cups granulated sugar

4 large eggs

1/2 cup milk

1 tbsp orange zest

1/2 tsp vanilla extract


1/4 cup brandy or ouzo optional

1 whole almond optional, for tradition

Powdered sugar, for dusting

Instructions:

1 Preheat your oven to 350F 175C and grease a round cake pan 8-inch or line it with parchment paper.

2 In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

3 In a separate large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing after each.

4 Stir in the milk, orange zest, and vanilla extract. Gradually add the dry ingredients, mixing just until combined.

5 If using brandy or ouzo, stir it in here. Add the whole almond to the batter for tradition, so it can be found later when serving.

6 Pour the batter into the prepared pan and smooth the top. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

7 Let the cake cool completely before removing it from the pan. Dust the top with powdered sugar.
