Moms Apple Fritters
Ingredients:
2 cups all-purpose flour
1 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
2 large apples, peeled, cored, and chopped
2 large eggs
3/4 cup milk
1 tsp vanilla extract
1 tbsp vegetable oil for the batter
Vegetable oil for frying
Powdered sugar for dusting
Instructions:
1 In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
2 In a separate bowl, beat the eggs, then add the milk, vanilla extract, and 1 tablespoon of vegetable oil.
3 Pour the wet ingredients into the dry ingredients and stir until just combined.
4 Gently fold in the chopped apples, making sure they are evenly coated with the batter.
5 Heat vegetable oil in a deep frying pan to 375F 190C.
6 Drop spoonfuls of batter into the hot oil, frying 3-4 fritters at a time for about 2-3 minutes on each side or until golden brown.
7 Remove the fritters from the oil and drain on paper towels.
8 Dust with powdered sugar and serve warm!
