Easy Vegan Chili
Ingredients:
2 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 bell pepper, chopped
1 can 15 oz kidney beans, drained and rinsed
1 can 15 oz black beans, drained and rinsed
1 can 15 oz diced tomatoes
1 can 6 oz tomato paste
1 cup vegetable broth
1 tbsp chili powder
1 tsp ground cumin
1/2 tsp smoked paprika
1/4 tsp cayenne pepper optional for heat
Salt and pepper to taste
Fresh cilantro or green onions, chopped for garnish
Instructions:
1 Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, and bell pepper, and sauté for 5 minutes until softened.
2 Stir in the chili powder, cumin, smoked paprika, and cayenne pepper if using, cooking for 1 more minute until fragrant.
3 Add the beans, diced tomatoes, tomato paste, and vegetable broth to the pot. Stir everything together and bring to a boil.
4 Reduce the heat and simmer the chili uncovered for 25-30 minutes, stirring occasionally, until the flavors are well combined.
5 Season with salt and pepper to taste.
6 Serve with a sprinkle of cilantro or green onions for garnish.
