Easy Paella

Ingredients:

2 tbsp olive oil

1 lb chicken thighs, cut into bite-sized pieces

1/2 lb chorizo sausage, sliced optional

1 onion, finely chopped

1 red bell pepper, diced

3 cloves garlic, minced

2 cups Arborio or short-grain rice

4 cups chicken broth

1/2 cup dry white wine optional, can substitute with more broth

1 tsp smoked paprika


1/2 tsp saffron threads optional

1 cup peas

1 lb shrimp, mussels, or clams your choice

Lemon wedges and fresh parsley for garnish

Instructions:

1 Heat olive oil in a large skillet or paella pan over medium heat. Cook the chicken and chorizo until browned. Remove and set aside.

2 In the same pan, sauté the onion, red bell pepper, and garlic until softened.

3 Add the rice, smoked paprika, and saffron, stirring to coat the grains in the oil.

4 Pour in the chicken broth and wine if using, then bring to a simmer. Cook for about 10 minutes, stirring occasionally.

5 Add the cooked chicken and chorizo back into the pan, along with the peas and seafood. Cover and cook until the rice is tender and the seafood is fully cooked, about 10 minutes.

6 Garnish with lemon wedges and fresh parsley. Serve warm and enjoy!
